Ingredients

350g (12.35 oz) grapeseed oil

120g (4.23 oz) Panko breadcrumbs
- 1 tsp flat leaf parsley, chopped
- ½ tsp lemon zest
- ½ tsp sea salt flakes

270g (9.52 oz) freshly picked crab meat

30g (1.06 oz) tomato ketchup
- 1 Tbsp sour cream
- 1 Tbsp creamed horseradish
- ½ tsp Worcestershire sauce
- 1 tsp extra virgin olive oil
- 1 Tbsp lemon juice
- ½ tsp sea salt flakes
- 1 tsp flat leaf parsley, chopped

35g (1.23 oz) Panko breadcrumbs
- 1 ½ lemons, grated zest
- 6 egg yolks

120g (4.23 oz) reserved lemon and herb crumb

For the crab cakes
Directions
For the lemon and herb crumb, heat the oil to 200°C (392°F) in a pan. Fry the crumbs until golden and remove, drain and set aside on kitchen paper to remove excess oil. Once cooled, combine with the parsley, lemon zest and sea salt. Set aside.
To make the crab cakes, combine all the ingredients in a bowl, apart from the egg yolks and crumb. Divide the mixture into 6 equal portions and shape on a flat surface using a circle ring about 6.5cm (2.56 in) in diameter. Compress the mixture in the ring and make an indentation/well. Place an egg yolk into each well.
To cook the crab cakes, place on the oiled flat plate of either the FORCE™ or the FURNACE™ Grill, set low. Close the lid to raise the temperature. Every few minutes flick some water onto the plancha surface to create some steam and close the lid again, this will help cook the egg yolk. The total cooking time is around 8 minutes, leaving you with a golden brown crispy bottom and a warm, runny egg yolk. To finish, remove from the Grill and sprinkle the lemon and herb crumb on top of each crab cake.
